Day 4: Pumpkin Mojito

The perfect Summer cocktail is the Mojito. It’s so simple and delicious, fresh mint, lime, sugar and rum. Could we add pumpkin to that to make it the perfect Fall cocktail? Tonight we were going to find out. I found a recipe at a blog called Hostess With Mostest. It was simple enough, replace regular sugar with brown sugar and add a little pumpkin. Well, we had run out of brown sugar from the biscotti, so white would have to do. Otherwise I made the recipe as is.

OK,  may have added more rum as well. We like our drinks a little strong around here. It came out nice and it had a pretty color but it didn’t really have much of a taste. So we doubled the pumpkin. Still nothing. Pumpkin really doesn’t have much flavor. What could we do to differentiate our Summer cocktail and give it a nice Autumnal feel? Spice is the answer. Cinnamon in fact. A little bit was just what it needed.

2 Tbsp Pumpkin

1/2 Lime

1 Tbsp Brown Sugar (we used White)

1/8 to 1/4 tsp of Cinnamon (adjust to taste)

2 oz Soda

Muddle mint leaves, sugar and cinnamon.



Add rum, pumpkin, soda, and juice from 1/2 lime. Mix well, add ice, and garnish with extra mint leaves.




The green cup was Penny’s non-alcoholic version. She said she liked it.

Tomorrow is Pumpkin Cauliflower dip and Sunday is Pumpkin Waffles.
